BHINDI DOPYAZ

Dopyaz - the word itself is self explanatory meaning double fried onions. This is an exquisite dish from the northern parts of India. There is an option of adding cashewnuts blended along with the gravy as well. Hope all will enjoy the bouquet of the okra.




Ingredients Bhindi (okra) - 300 gms

Onion (pyaz) - 2 no (sliced)

Tomato - 2 no (chopped)

ginger/garlic - 2 tsp each (chopped)

Cardamom - 2 ea

cloves - 2 ea

cumin seeds - 1 tsp

Cashewnut -1/4 cup

oil - for frying

chilli powder - 2 tsp

seasoning - to taste

Method

Trim the okra top, bottom & fry it whole in oil until crisp.

In a separate pan heat oil & add in the cloves, cardomom & cumin.

Add in the ginger & garlic & allow it to cook until the flavour extracts.

Add in the chopped onions & allow it to cook with salt.cook the onions until it is golden brown in color.add in the chilli powder,tomato,cashewnut & allow it to cook until the raw flavour is gone.

Remove from heat. Allow it to cool for a while blend in to a fine paste.

In a separate pan heat oil & add in the finely blended paste & simmer slowly until the raw flavour is devoured. It takes a little bit time as the onions & tomatoes loose water when they get cooked.

Once the gravy is cooked well add in the fried okra & finish it with chopped cilantro.

Serve hot. Ideal for any kinda breads or rice dishes.
